Healthy & Vegan Gingerbread Cookies | Blogmas


Hi and Happy Holidays!
These past couple of years, I spent Christmas away, the first year in Manchester, and last year in Dublin, and both years I saw gingerbread cookies everywhere! I think that might be a tradition? I saw them in a lot of shops and they were amazing and delicious!
So this year, I decided to bake some vegan gingerbread cookies for my house and to give away to some friends!

INGREDIENTS

1. 165 g of oat flour ( or any other flour of your choice)
2. 3/4 tsp cornstarch 
3. 1/4 tsp baking powder
4. 1 + 1/2 tsp ginger spice
5. 1/4 tsp cinnamon
6. 1/4 tsp nutmeg 
7. 1/4 tsp cloves 
8. 1/4 tsp salt
9. 28g of melted, and cooled coconut oil
10. 1 flax egg
11. 1 + 1/2 tsp vanilla
12. 60 ml of molasses




INSTRUCTIONS


Start by mixing the flour with the cornstarch, the spices and the salt. 
In another bowl, mix the coconut oil with the flax egg and the vanilla. When the mix is well combined, add the molasses and stir until all incorporated. 
Add the mix to the flour and mix all together. Wrap the dough in a disc shape and chill for, at least, one hour.
Pre-heat your oven at 180ºC. 

Remove the chilled dough from the refrigerator. Flour generously the surface, as well as your hands and the rolling pin. Roll out disc until 1 cm thick. Cut into shapes. Place shapes 0.5 cm inch apart on pre-prepared baking sheets. 

Bake cookies for about 9-10 minutes. Allow the cookies to cool for 5 minutes on the cookie sheet. Transfer to a cooling rack to cool completely. Once completely cool, decorate as desired.

Note: Mine have those granulates because I used the blender to blend the oats to create oat flour!
I was very happy with the way they turn out! They even though they weren't smooth (Note*), they tasted amazing! It's my first ever gingerbread cookie success! And very easy to make!
